Newly picked cherries are placed in large tanks containing sulphurous
anhydrid and they are kept there for at least 35 days.
Later they are pitted.
Soon they are selected by color, eliminating the stained or defective
cherries.
They are prepared in cans of 130 drained kg.
Cherries only apt for industrial consumption. Available natural or
whitened
Brinned cherries as raw material are rinsed properly to eliminate
all vestige of anhydrid. Later they are pitted and selected.
Color and sugars are added, in a concentrator to stabilize in 55 /
57 brix degree.
Finally they are inspected, canned syrup and flavor are added and
then go to a sterilizator.
They are used in bakery, ice- cream, drinks, chocolates, industrial
consumption and in homes.
Available whole, pieces and halves.
Fresh cherries are selected, calibrated and finally washed.
Then they are packaged in glass jars or cans with their syrup, and
are sterilized in a steam tunnel at 105 degrees Celsius for 23 minutes.
They are used in desserts and fruits salads.
