They
are picked when they became yellowish green. They reach the processor
in harvest boxes. They are washed in caustic soda to remove bitter
taste, then they are washed for several days and are left to ferment
(lactic fermentation) for 3 to 5 months.
Packed with own or customers brand, as required. In bulk, in plastic drums or as requerid.
