IQF CAULIFLOWER

Cauliflower has stem which ends in a flower known as "pan" or "pella" this is the part used for consumption.
Young leaves wrap the "pan" progressively protecting it from outer conditions or ligth.
It is very important to determine the right harvest time because the plant has a compact structure for a short time after which the stem grows and flowers ripe. This can be identified by increasing yellowish color.

In the industrial process leaves are removed, flowers are separated by cutting the setm according to specifications. They are classified by size, quality degree and then frozen in IQF tunnel.
