IQF broccoli florets
•VARIETIES
Marathon, Arcadia, Climax
|
The plant
has a relatively tick stem (3 to 6 diameter) and it is up to 50 cm
high. It ends in primary flowers, known as bread or "pella", which
is the part used for consumption.
Broccoli has lateral side ramifications which develop secondary flowers
of a smaller size which are also processed.
It is very important to determine the precise harvest time. This is
because they have a compact structure for a short time until stems
grow and quality ripe. When this happens they lose quality conditions.
When processed, leaves are removed, florets are separated by cuting
their stem according to specifications. They are calssified according
to size and quality. They are frozen in IQF tunnel.
Several washes take place during the process
